thanks to your clear directions I 've made this loaf several times, i usually double the recipe and include the starter in the the final loaf. After baking in a dutch oven the latest loaves are 1115g and 1165g each but they dont seem to have the volume I would expect, they look and taste fine , with a good crumb and no large holes. When forming the boules I may make them too tight, then fridge 10 hrs and 45 min warm up before bake. could this be the problem that the loaves never get to their full size
