What do you think of the idea of freezing the rolls as you suggest (having had no rise at all), keeping them frozen for 3-4 days, and then taking the out of the freezer and putting them in the fridge to thaw overnight. Then take them out in the morning and bake them four hours later. I am afraid that with using the method you recommend that they will not defrost and rise in time. Your thoughts?
