In the past I have experimented with several of the techniques you listed in your trials, with mixed success. These hints will definitely help with my efforts to be ready ahead and/or have good rolls without the mix time. I normally use an overnight refrigerator rise technique for holiday rolls but am going to try this technique this year (on one pan of rolls at least as my clan would revolt if we don't have yeast rolls on the table) Appreciate this site immensely!!
