Hi Max, Sourdough baking can be a bit mysterious - that's part of the allure! Early on in your starter's life, it will be quite vigorous but won't have too much of a sour aroma. It will build up flavor once you store the starter in the fridge, which it sounds like you can start doing right away. Keep it in the fridge for up to a week before feeding for best results.
