Hmm, that's tricky, Lindsey! A pumpkin cake would likely be pretty heavy, making whipped cream a less than ideal filling. If you fill the center with buttercream and then save your whipped cream to top the cake at the last minute before serving, that would be your best bet. Happy baking!
