If I have loads to bake for orders, I scoop them all out the night before on trays and refrigerate for the night. The next morning put them straight in the oven from the fridge. I do notice a different from convection to regular bake. When baked in Convection 325F they don’t spread so much but stay thick which I like. After scooping them out with my 1/4 cup scoop...yes I like big cookies, I pat them down slightly. My kids now prefer big cookies. When baking in regular oven 350F they spread just a little, but definitely can see the difference in the 2 when side by side. I also make loads and freeze them before being cooked so I can take them out anytime for people big or small, want fresh cookies, plus my kids and I like different cookies.
