We're glad to hear that you're excited to get started on your own sourdough adventure, Cheryl! If your schedule only allows for feeding the starter once a day, that'll be just fine. We'd recommend using cooler water rather than warm to slow fermentation, it'll also take a bit longer to start seeing regular activity. We hope this helps and happy baking!
