Hi Lois, your 10" square pan is much larger than the 9" diameter cast iron pan that PJ used. Your pan has a 100 sq. inch footprint while PJ's has a 64 sq. inch footprint. If you'd like your cake to be thicker, multiply the ingredients in the recipe by 1.5. It is best to do this by weight. As for the preheat setting on your oven, you'll need to review the owner's manual for the correct settings.
