Joann, the marshmallow is already set by the time you're done beating it, so that's what makes it difficult - it's VERY sticky, and I had all I could do to press it into a larger pan and smooth it out. I can't see dolloping it into the smaller mini-muffin pan. That said, you could totally use Marshmallow Fluff, which IS very scoopable. And yes, if you thin the chocolate a bit with vegetable oil, perhaps, you could pour it over; it's too thick to pour, the way I did it. Bottom line, this seems absolutely like it would work; I'm not scared at all of you thinking! :) Thanks - PJH
