LOVED THE BLOG! My oven is broken, and for now I have to use my bread machine to bake bread. I have a Cuisinart, which does a great job with quick breads and cakes, but not so much with my yeast breads. The loaves turn out dense and don't rise very high, even though I'm following the recipes provided with the machine exactly. Sometimes the crusts are very hard, too. My yeast is new. Could it be the flours? I am using some unbleached bread flour and some White Whole Wheat (can't get King Arthur right now, so Kroger brand. It looks and feels exactly the same as KAF). Any other tips for getting a lighter, higher loaf? I loved this blog, and yes, I remove the paddle and reshape the loaf after the final rise.
