Linda, try using an elastic shower cap instead of waxed paper or a dishtowel - the cap "poofs" up above the rising loaf, never touching it - so no chance of sticking/deflating. I use clear ones so I can see what's going on; I always pick some up when I travel, as motels still seem to provide them for their guests. Good luck - PJH
