Thank you, Barb. Your comment on the sugar is spot on - that's absolutely my issue. I kept the heat very low and it ended up taking ~ 3 hours to even sniff 248, and the caramel got very dark. I halved the recipe without brown sugar to a similar result, then tried it with refined for both and VOILA. It's a surprising result as I've used organic cane sugar in candies before without that issue, but never with dairy also in the mix. Either way, perfect advice! Thanks again!
