Hi Kimberly, we're sorry we weren't able to answer your question in a timelier fashion and hope your tartlets turned out great! For future reference, it really depends on the size of your tarts, but for smaller tartlet pans, a ball of dough and pressing it up the sides should work well, as illustrated in this blog post
