Thank You! I did notice that when I make cookies on a jelly roll pan and parchment this always happens to me! Large batches. I have a certain recipe that I use an airbake cookie sheet for because no greasing is needed. Even at the same oven temp as above, I don't get the spreading. Could that be because of the air center keeping the cookie bottoms cooler? Great article. C.
