The taste of these caramels is outstanding - I could not eat just one! However, after 1 hour and 10 minutes of cooking I gave up as the mixture was only at 240 degrees. As a result my caramels were extremely soft and sticky. I know my candy thermometer was correct because it was at 225 for so long that I tested the mix with my instant read and got the same temp. What did I do wrong? The recipe says to cook for 20-30 minutes and I had the pot on my hottest burner. I want to make them again but would like better results.
