I have had a bread machine for 12 years and made at least 400 successful whole wheat loaves during that time. But now I have had twelve flops in a row: hard little loaves with no "chew" to them. Once I caught the loaf rising and collapsing; the other times, it seems not to have risen at all. (Maybe a watched loaf never rises.) I have tried replacing the flour and the yeast, using more yeast, using less yeast, using less water, and adding more gluten. I think I am under a magic spell, but will be grateful for any advice!
