This blog post has been so helpful! I have been making a cinnamon bread for over a year now[grandkids love it]. The first few times absolute perfection. The whole slice wouldn't even fit into the toaster! Then.....flatter and flatter, no oven spring, falling over the edge of the pan and the cinnamon was nowhere to be seen or tasted!
