Emmy, what you may be smelling in other cake flours is the chemicals that are used to bleach it (usual bleaching include organic peroxides). Our cake flour blend is not bleached, so there are no chemicals to artificially age it or change the color. We hope you give our cake flour blend a try and see if you like the textural results--light, fluffy cakes--without any chemical-aftertastes! Happy baking! Kye@KAF
