We do love the method of mixing it with water, Marsha, particularly hot water. This allows for the cocoa to absorb more moisture before it bakes. Ever had a dry chocolate cake? Cakes made with cocoa mixed with dry ingredients are often dry because the cocoa absorbs all of the moisture in the cake as it bakes. Annabelle@KAF
