Hi, Brittany! You don't mention whether you're looking for a cake that is Keto, or just one that is gluten-free. Regarding gluten-free baked goods, you may find that leaving them for a day before serving reduces some of the grainy texture. But if it's his birthday and he really insists that he doesn't want gluten-free cake, it might be worth making or purchasing him a cupcake that he'll enjoy wholeheartedly, while also making a cake for the folks in the family who would prefer to be stricter with their diets.
