Sometimes sugar is added to bagels to help enrich the dough and develop a deep, golden crust. We didn't find it necessary in this formula since the cheese melts and turns into a delicious, melted cheese crust. However, if you found the flavor a bit flat, feel free to add 1-2 tablespoons of sugar next time. Kye@KAF
