We've found that the Pastry Cream Mix does a beautiful job of making a filling for layer cakes when you are pinched for time or when you have a large amount of work to do to make the other parts of the recipe. It tastes creamy and smooth with a deep vanilla flavor--it also takes less than half the time of making pastry cream from scratch. However, some people prefer the flavor of a homemade pastry cream with its fresh eggs and milk and sweet custard flavor.
