Question: I'm getting ready to start a sourdough, but wondered how "strict" the schedule is.
-- If I'm keeping my sourdough in the frig, but want to bake before the "weekly feeding", can I just take it out, feed it, warm it up and use it whenever I want to? Does it mess up the sourdough if it's fed irregularly (sometimes once a week, sometimes more often)?
-- If I normally feed/use my sourdough 1-2 times per week, but then am out of town for 9 days, will it suffer from being left longer than a week?
