I started my first sourdough starter 7 days ago. My starter has lots of bubbles and a nice sour smell, but it is not rising it has not doubled in volume. I have followed the instructions very carfully. I'm doing something wrong but not sure what. I would love some troubleshooting ideas. The good news is that the starter is alive and kickin' . If it is too thick, it will have a harder time rising. Try adding 2-4 more tablespoons of water to it to thin it down a bit.
