Hi Gordon, we can see the source of your confusion! Water weighs about twice as much as water. So while 1 cup of flour weighs about 4 ounces, 1/2 cup of water weighs the same amount. You want to use the same amount of flour and water by weight, or about twice as much flour as water by volume. We hope this helps clarify!
