Well, yes, to be true to sourdough, the use of a sourdough starter is the way to go. But, if taking care of a starter is not your game, consider using a product called French Sourdough Starter. It is a simple as adding a little to each dough for a mildly assertive flavor. You can also consider longer cooler proofing times for developing the flavor.
