PJ, I love reading your blogs, especially when you reminisce - I've lived in Wisconsin all my life! I'm new to sourdough, but anxious to give it a go. On Day 1 when starting can I use KAF White Whole Wheat flour, or it is best to start with regular whole wheat? Also will the starter have a different flavor profile using pumpernickel on day versus the wheat flour?
