Aging pumpkins and squash is commonly called curing them. They are left in the sun to harden the skins before storage. During this couple of weeks the flesh can sweeten and provide a richer flavor from one picked and immediately used. Unless you are picking your own or get them from a friend they are probably already cured but you may want to ask at the farmer's market or stand. Great tip, thanks for sharing Brenda! ~ MJ
