Betsy: My comment is years after yours, but Bobs Red Mill makes plain potato flakes and they’re parve. Nothing else added. I get it at Natural Grocers by Vitamin Cottage, a “healthy food” store chain. You must be shopping at a mainstream warehouse or supermarket, I’ve looked those multiple shelves of prepared potato flakes boxes and read the long unpronounceable ingredient lists. Bobs is just potatoes. A hint though: it may be harder to find in stock at Thanksgiving! You can get it from Bobs. You can also use potato flakes instead of panko as a “breading” to coat what you're shallow frying or a crisp casserole topping. There can be a night when you’re too rushed to bake or steam potatoes for the family supper. ;)
