Hi there, Gary! We find that internal temperature for cakes it's the most reliable way to test for doneness. The final internal temperature of a cake can vary based on the kind of cake, most often the internal temperature of a cake when done is about 210°F. You can certainly use a thermometer as one test for doneness but we would recommend also testing the cake with a cake tester (or toothpick). We hope this helps and happy baking!
