Hi Peter, rather than adding more butter, you might want to consider using half vegetable oil and half butter for the fat content. Since oil is 100% fat, you'll get a little more moistness and tenderness, while maintaining some of the buttery flavor, and you shouldn't need to adjust any of the other ingredient amounts.
