Hi Rebecca, this recipe calls for either 1/4 cup of potato flour or 1/2 cup of dried potato flakes, so it depends on which one you're able to find. In general, you can always use either. If a recipe calls for potato flour, you can always use the same amount of dried potato flakes by weight or twice the amount by volume. Neither is necessarily better, we just find potato flour easier to mix in with the dry ingredients so it's what we carry and bake with the most.
