Hi Terri, this recipe was developed using our Gluten-Free All Purpose Flour which does not contain any xanthan gum. We do not typically recommend substituting the Gluten-Free All Purpose Flour for the Gluten-Free Measure for Measure flour or vise versa. Because the two products are different in multiple ways, unfortunately omitting the xanthan gum will not be enough to make this recipe successful. Hope this helps and Happy Baking!
