Just opened your email regarding GF bread and other baked goods. I was diagnosed about 7 months ago with Celiac-Sprue Disease. Have been having some luck with bread. I have a Zojirushi BBCC-V20 bread machine that has a home made cycle. Zo sent info on baking GF bread and said to use the homemade cycle and setting it for: Preheat: 15 min. Knead:30 min. Rise 1: Off. Rise 2: Off. Rise 3: 55 min. BaKe: 55 min. (I changed baking time to 65 min. They have a bread recipe on their web site for GF bread. I also use other GF bread recipes and just use the bread machine to Preheat and Knead. Take dough out and let rise in pan and than bake.
