Hi, Thanks for this! I just made these this morning. I had better results than with the other baguette recipe on the KA site. However, I have a question. Once in the fridge, my dough does not seem dormant. It keeps on growing! Can I (should I) punch it down? Otherwise, it might take over the whole thing. I punched it in the afternoon. Shaped some and kept them in the fridge overnight and then baked this morning. They were great, but I wanted to know if they would have been better.... They should rise a bit in the fridge, but not go crazy. if they're rising too fast, cut back on the initial amount of yeast you use; or don't let them rise at all before putting in the fridge. Either of those should help- PJH
