After adding the water and dry ingredients into mixing bowl, you state that you beat them together to make a rough, sticky dough. Do you do this with the flat beater and then switch to the dough hook? I have a KitchenAid Professional 5 Plus stand mixer, and the instruction manual says "ALWAYS use the PowerKnead Spiral Dough Hook to mix and knead yeast doughs". Is it safe to beat the ingredients with the flat beater? I think I read somewhere you use a KitchenAid Stand Mixer. Thanks, I can't wait to try this recipe! I'm a beginner baker. Use your dough hook, Ok? It is always best to use the dough hook unless you are making a gluten free yeast bread. In that case, a paddle is best. Elisabeth I disagree with Elisabeth - this dough is so soft that it's almost a batter; it's certainly less stiff than cookie dough, which you beat with the flat beater, so I'd go ahead and beat it with the flat beater. If you use the dough hook, the dough/batter just won't mix up very well. PJH
