You can thaw frozen pie crusts in the fridge the night before you're ready to bake. Keep them in their wrapping to prevent them from drying out. You should still be able to follow your normal baking routine of chilling the crust before baking; this actually benefits the crust and helps ensure it'll hold its shape during baking. Happy baking!
