I live above 7500 ft. and have always had difficulty getting my muffins to rise properly. I've tried the usual suggestions for high altitudes, but I end up with a chewy texture that is not very appealing. It's somewhat spongy....and not in a good way. My kids love muffins....and dates, so these sound great. What can I do? Katrina, a chewy/spongy texture shouldn't have anything to do with high altitude, so I'm kind of stumped.But take a look at our high-altitude baking tips, anyway - hopefully something there will help.
