Preheat a waffle iron while you prepare the batter.
Weigh your flour; or measure it by gently spooning it into a cup, then sweeping off any excess.
In a large mixing bowl, whisk together the flour, baking powder, Pizza Seasoning, and cheese powder.
In a separate bowl or measuring cup, whisk together the egg yolks, milk, and butter.
In another bowl, beat the egg whites until stiff peaks form.
Mix the egg yolk mixture into the dry ingredients, stirring just until combined. Fold in the cheeses followed by the beaten egg whites.
Scoop the batter into the hot waffle iron. Cook the waffles as directed in the iron’s instructions.
Serve waffles immediately, or keep them warm in a 200°F oven. Freeze any leftover waffles for up to 1 month.
