Fudge Frosting

This deep-chocolate, fudgy frosting is poured, rather than spread over the cake. Because it is a cooked cocoa frosting, it begins glossy and sets super smooth as it cools. (That is, if you don't mess with it a lot during the application!) It creates a perfect surface for decorating.

2 cups, enough for a 2-layer cake, one 9" x 13" cake, or 2 dozen cupcakes

Instructions

Prevent your screen from going dark as you follow along.
  1. In a medium-sized saucepan, melt the butter over medium heat. When the butter is melted, stir in the cocoa and yogurt, and bring the mixture to a boil.

  2. Turn the heat to very low, add the confectioners' sugar and vanilla, and beat until smooth.

  3. Working quickly, pour about half of the frosting atop one layer, spreading it around the sides. Center the second layer over the first, and pour on the remaining frosting, spreading it evenly to the edge and along the side of the cake.
