While the dough does not need to be completely room temperature before going into the oven, we do like to give at least one to two hours for a final rise before baking. The exact amount of time needed can vary drastically due to each kitchen environment. The cooler the space, the longer it may take for that final rise. If your kitchen in on the warmer side, that process may only need 60-90 minutes.
