To make the dough: In a large bowl or the bowl of a stand mixer, combine the dough ingredients using a spoon, spatula, or the flat beater attachment. The dough will look a little dry at first, but it will become a soft, somewhat cohesive dough as you stir. It’s OK if it looks a little rough at this stage.

Knead the dough, by hand on a clean work surface or with the dough hook of the mixer, for 3 to 4 minutes, or until the dough is bouncy.

Cover the dough and set it aside for 15 minutes. While the dough is rising, preheat the oven to 375°F with racks in the middle and bottom. Grease or line 2 baking sheets with parchment.

To make the glaze: In a medium bowl, mix the glaze packet with the water. Stir until combined and set aside.

Deflate the dough, then divide it into 4 pieces (about 165g each). Roll each piece into a 15"-long log and then cut it into 10 to 12 pieces.

Working in 4 batches, toss the pieces in the glaze mixture until they're evenly covered. Place 2 strands’ worth of pieces per baking sheet (about 20 to 24 pieces).

Lightly sprinkle the glazed pieces of dough with the pretzel salt and let rise for 5 minutes, uncovered. Use as much or as little pretzel salt as you like.

Bake the pretzel bites for 10 minutes, then swap the pans from top to bottom and bake for another 5 to 10 minutes, or until well browned. Let cool completely on the baking sheet.

Let the pretzel bites cool on the pan for 5 minutes then serve and enjoy. These bites are best the day they’re made.
