Hi Michelle, unfortunately we don't have a good gluten-free substitute for cake flour. You could try using our Gluten-Free Measure for Measure Flour and perhaps reduce the amount of flour a bit or add a little more egg. Alternatively, you could try using our Gluten-Free All-Purpose Flour and xanthan gum, following the tips in this blog post for converting a cookie recipe to be gluten-free.
