Because I'm single, I frequently make a half of a layer cake or pie.
For a two layer cake, I bake it in one pan, then cut it in half vertically and stack the pieces. Voila, a half of a layer cake.
A 7" pie pan holds half the quantity of a 9" one, so I just half everything.
