Hi Linda, we're sorry you're having difficulty visualizing this step! The principle here is that the bench knife/ruler is holding the dough evenly in place by applying uniform tension, while you simultaneously pull on the parchment to gently tighten the roll of dough to smooth out any lumps or unevenness. It is a little hard to picture, but I think if you experiment a bit, the process will become clear. And I will definitely pass along your request for a video!
