Hi Jane, it's hard to say exactly what has changed to cause the recipe not to thicken up properly. Has your oven changed? Perhaps the heat is running low, and this is affecting how quickly the pie thickens. An oven thermometer might help out here. Perhaps your flour and/or cherries have also changed recently? Both could impact how the recipe thickens. Check our our Pie Thickener Chart for some ideas on different types of thickeners and how much we recommend using for a variety of fruit pies. It could be that another type of thickener would work better for you.
