Hi Kitty, this is generally recommended for sweet pies, but a teaspoon of sugar shouldn't drastically affect the flavor of your quiche. I've also seen bread crumbs used in a similar way, so you might want to experiment with this if you're wary of using the sugar/flour mixture in a savory pie.
