Hi Carol, sourdough starters generally do fine with room temperatures as low as 68°F, but if you're home is much cooler than that this bread proofer might be just what you're looking for. You really don't need to aim for an extremely warm environment for creating and maintaining a sourdough starter, and sometimes too warm can present other difficulties, so no need to crank up the proofer too high (I wouldn't recommend temperatures over 80°F). I've had no difficulty creating a starter when my home hovers around 70°F during the day, and a bit cooler than that at night.
