I proof in my microwave. First I heat a 2 cup measure of water. I place my bowl of dough or loaf in a giant plastic bag I use only for proofing. For loaves on a bakingsheet, the stove light under the microwave keeps the oven warm, or I heat a glass baking dish of water and let the bread rise in the bag. Oftentimes if I rise my loaf in the refrigerator I have to chill the dough before shaping as my sourdough is very active usually.
