Hi Brigid! Unfortunately, I would not recommend doing this as a gluten free recipe. Although you are not looking to develop the gluten, it is still necessary to provide structure so that the rise and flakiness can be achieved. At this time, we do not really have a comparable gluten free recipe. Happy baking!
